Ding Dong The Witch is Dead...

Things have been crazy lately so I havent had much time to update this thing. I seem to always be swamped with school work! I hate school...I dont know why I decided to go back. I'm hoping it gets better or I get used to it. But so far that isnt the case. I was on the wait list for the CNA class that started Oct 16th and they decided to send me an email the 15th letting me know I got a spot and could register for it. However, I only had 12 hours to decide and I didnt check my email until after it was too late. Assholes! But whatever, I am registered to take it next semester anyway.

It's approx. a week and 4 days until the Marine Ball...oh joy joy. And instead of doing the usual which dress should I get bullshit like every other year, I am wearing the dress I wore for Emily's wedding. Its a really cute dress and it fits me better now than it actually did for her wedding. I still used dress shopping as an excuse to get anyway for a day though. And Katie and I went to St Louis to "dress shop". Which turned into trying on ridiculous and hideous dresses just for the hell of it and shoe shopping. It was a fun day until we got lost on the way home. We some how ended up on these creepy back roads in the middle of no where with nothing but corn fields around us. And it would have been fine it is wasnt like 10 at night. That's when things started getting scary. It probably didnt help that I've seen too many scary movies. I swear it was the classic horror movie scene though. Including cell phones losing reception and trucks showing up out of no where and trying to run us off the road! We somehow managed to make it home safely though.

As for Lyndon, he is getting way to big. And so bossy! Lately every thing that comes out of his mouth is follwed by 'right now!' Such as "get me a sippy cup, right now!". Of course, he doesnt get it. I dont play that game. I refuse to get him anything unless he says please mommy. My absolute favorite thing he says though is "I love you too much!" after I tell him I love him so much. It is soooo cute.

I'm still havent decided on a Halloween costume for him. I guess I am just being too picky. But considering Halloween is this weekend, I guess I should decide on something. He absolutely loves going to the Halloween store too. Everytime we get in the car he asks if we are going to there. He is obsessed with Halloween right now. He has such an imagination too...thank god! He walks around the house with boxes in his head saying really slowly in a monotone voice "Robot, robot" He is nuts!

Oh good news, we might be coming home for Thanksgiving! The hubby asked me yesterday if I wanted to cause he was thinking about taking leave. OF COURSE I DO!!! Like I would turn down a chance to go home! He even agreed to participate in my family events after I promised he wouldnt have to see a certain wicked witch (haha)! Hopefully his leave request gets aprroved and we get to. We shall see though.

Doggy Jail

Sometime Tuesday afternoon I put our demon dog, Icee outside on her runner. She doesn't go out there a lot but every now and then if she has been trapped up in the house for a while or just really on my nerves I put her on it. Well since the in-laws were here for the weekend, she had been locked up in her kennel quite a bit cause she just wouldn't settle down. So anyway, she had been out there for a few hours and I had went out to check on her every once in a while to make sure she was ok and not tangled around the tree or something. Around 4:30 maybe 5, I went out to get her. As soon as I walked around the garage I knew she was gone. I could tell by how her line was that she wasn't on it anymore. I then noticed a piece of her collar lying on the ground. She had the kind of collar that is loose on her until she pulls against it then it tightens. Great collar...except when you have a dog smart enough to realize she can chew that piece off and set herself free. Me and Lyndon then proceeded to walk to neighborhood looking for her until it started getting darker and pretty chilly. She was no where to be seen! When Clem got home, I made him ride around looking for her...no luck! We asked the neighbors if they had seen her and the guy next door said he had and he tried to grab her but she didn't have a collar one so he couldn't get a hold of her. Well thanks for walking next door and letting us know that earlier!!!!I was surprisingly worried about her that night. It was really cold and I just knew she had gotten in the creek down the road which means she would be a dog-sickle by morning. I tell her all the time to run away but I didn't really mean it. Well yesterday, I called Animal Control aka Doggy Jail to see if maybe they picked her up. I described her, and guess what! They picked her up the night before! Thank god! But since they were about to close and Clem had my car I couldn't go get her until this morning. So after making a trip to Walmart to buy a new collar like that one she had and a metal one for when she is on her line, I picked her up. She was so hyper and excited to see me and Lyndon...and to get out of that cage too I'm sure. She will be making a trip to the vet soon to be micro-chipped since she is an escape artist. She is home though and Lyndon couldn't be happier

It's a bird..It's a plane...

No, it's Super Lyndon! I honestly believe he thinks he is a super hero. He is crazy. He jumps off of the end tables in the living room and says he is flying and runs around with the motorcycle helmet on his head saying he is a super hero. Well, while I was studying in the living room a few days ago, I had locked him in the kitchen with his daddy (baby gates are wonderful!) After hearing lots of laughing from his daddy and him telling Lyndon to be still numerous times, I thought I should investigate. God only knew what he could have been doing to that poor baby. He is so evil sometimes! This is what I came in the kitchen to find. Daddy is SO mean!!! Ha ha! Lyndon loved it though. He always puts boxes on his head anyway, so this was perfect. It reminds me of the Spartan on 300. Shortly after this, it was ripped off. He didnt like that I took pictures of it. I guess he knew I'd post it for the whole world to see and later in his life use it as blackmail to show all his little girlfriends! He knows me so well :)

Yummy!!!

So I decided Saturday that I would actaully cook a real meal. Something really good that I dont usually cook. Well I had these whole crawfish that were seasoned and frozen. I found them at this really cool grocery store not long ago and hadnt used them yet. So I looked up recipes and found one of Emeril Lagasse's that sounded REALLY good! Considering my husband will pretty much eat anything anyway I figured it was worth a shot. Man, was it good too! And it was actually pretty easy to make, with the exception of trying to peel those damn crawfish while cooking everything else. I probably should have done that first but he was rushing me because he was hungry. MEN! The pictures dont even do it justice. Luckily however, I did snap a few before he dug into it. Good thing too because there was NONE left...not even one piece of pasta! {It looks like that is barely any crawfish in it but there was well over the 1 lb. it called for. It just all settled to the bottom. } Here is the recipe:

Crawfish & Cream over Pasta

Ingredients
1 pound linguine or fettucine
2 tablespoons olive oil
6 tablespoons unsalted
butter
1 cup chopped yellow onions
2 tablespoons minced garlic
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
1/4 teaspoon cayenne
1/4 cup dry white wine
2 cups heavy cream
1 tablespoon fresh lemon
juice
1 pound crawfish tails*
1/2 cup chopped green onions
1/2 cup chopped fresh parsley leaves
1 cup grated Parmesan
Directions
Cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes. Drain, reserving 1/4 cup of the cooking liquid. Return to the pot and toss with the olive oil and reserved cooking liquid. Cover to keep warm.
In a large saute pan or skillet, melt the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. Add the garlic, Essence, salt, and cayenne, and cook, stirring, for 1 minute. Add the white wine and cook over high heat until nearly all evaporated. Add the cream lemon juice and cook, stirring occasionally, until slightly reduced. Add the crawfish tails and cook, stirring, to warm through. Add the onions and parsley and cook for 1 minute. Add the cooked pasta and toss to coat with the sauce. Cook until the pasta is warmed through, about 1 minute. Remove from the heat and add 1/2 cup of the cheese.
Turn out into a serving bowl and top with the remaining 1/2 cup of cheese. Serve.
*Peeled medium shrimp can be substituted, but the cooking time must be increased to allow thorough cooking.
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup


{The only changes I made were I used bottles Lemon juice because I forgot to buy lemons and I left out the paprika in the Essence Seasoning because I forgot it too...ha ha oh well! It tasted really good anyway!}

What!?

Just a little update about my last post. No, I haven't decided what he is going to be yet. However, I told his daddy about the Swiper costumes and showed them to him. With out any hesitation, he told me to buy the $130 one! WHAT!?! Are you serious! It's 130 dollars...not monopoly money!!!! Although I am really tempted to just because he said I could, I cant bring myself to spend that much a costumed he'd wear one year. Granted, I'm sure he would get his use out of it and wear it everyday until he grew out of it. Or, I could sell it on Ebay and make some of that money back. It would kill me to shell out that much money on a costume! I'm just in shock he told me to get it. He has lost his crazy mind!

The Great Debate

So maybe it isnt a great debate...but whatever. I have been trying to think of what Lyndon could be for Halloween. After thinking for a while, it hit me...a Flying Monkey off the Wizard of Oz. It would be perfect! He is a little evil and we are related to the Wicked Witch (I shall not name her but it shouldnt be hard to figure out). I searched and searched for a cute Flying Monkey costume but with unfortunately I didnt find one that was actually cute and his size. I was very upset. I considering seeing if Lyndon's super sweet Aunt Erika would make him a Flying Monkey costume if I found a good plain monkey costume. I then began to come up with all kinds of random choices. Kangaroo, squirrel, zebra (haha..I bet he would be afraid of it just like his zebra tent). I dont realy want to do a character off of a movie or show...it seems to be what everyone does. I want him to be cute and kind of stand out. Well with his new obsession with Dora, and his constant talking about Swiper the Fox, I thought that would be extremely cute. I started my search for it which lead me to one of the only Swiper costumes I could find...it is HIDEOUS (yes, thats a picture of it)! It looks like Swiper had rabies or something. I couldnt possibly put my child in that thing! Then I found a this PERFECT one! It looks so much like Swiper, its unreal. I couldnt save a picture of it to put on here because its copyrighted. And as much as I want that costume for him..it is $130! I cant bring myself to spend that much money on a costume he will wear one year! Its insane. Now I'm not sure what he is gonna be and of course his daddy is NO help! Men are useless. But I need ideas...any suggestion?!?

I'm a college student AGAIN!!!

It's been a while since I've posted anything. And so much has happened since then. I wouldnt know where to begin so I guess I will just stick to whats going on now.
I've been planning and wanting to go back to school. Yes, I am very aware that I am crazy for wanting to go back to school. But I do...at least at the moment. I'm sure once classes start I will regret it. So anyway. I had applied for all the financial aid stuff way back when and applied to Lincoln Land (which is a little community college...its a start though). At the beginning of July, I got the financial aid award letter from Lincoln Land. Pretty much, I would be getting a Pell Grant that was almost double tuition. I was pretty pissed at the time cause I did think I would get to go back to school. Well yesterday, I registered for classes!!!! Considering classes start the 24th (well the 22nd for me) there wasnt many open classes left. I got stuck with an online Composition class, a hybrid Biology class (all my class work is online and I have to go to lab 4 times during the semester. Turned out the lab was from 6:00 pm- 9:50pm oh joy!), and a Political Science class that is on Saturday morning! Such a great schedule, dont you think? But how my classes fall, I wont have to put Lyndon in day care yet. So I can save up that money for a little while. Then in Oct, if I get into to Certified Nurses Assistant Class (*fingers crossed* I'm #2 on the waitlist) I will have class 5 days a week from 8-12. So I will have to put Lyndon in daycare then. I'm just ready for classes to start...I've been anxious since I left the school yesterday. Its crazy.

About Lyndon now, I guess. He is a wild beast. That pretty much sums it up. I'm sure you thinking I'm kidding. If only I were. We spent quite a bit of the summer in LA. Which means he spent a lot of time with his Mamaw. And that can never be a good thing. Especially when Mamaw lets him do, say, and act however he wants without any punishment. I have to be the bad guy then, and try to break him of all these new habits. Which leads to horrible headaches from fussing all day. I usually takes 2 weeks to break him of 1 week spent with her. Well it was almost 2 months so I'm guessing sometime late next year I will have him broken of it all. He is doing really well with potty training though. He wears big boy underwear during the day unless we will be in the car for a long time and he only wears pull-ups at night...mostly because I dont want to chance him peeing in the bed.

I guess that's it for now. I will update more later
